Puréed Cream of Celery Soup
A comforting puréed celery soup, flavored with sherry, garlic, and onions, is thickened with potato and finished with crème fraîche and fresh herbs.

Instructions

Peel and cut celery and potato into 1-inch pieces.

In a soup pot, heat butter over medium heat. Sauté onion, garlic, and celery for 2-3 minutes until the onion is translucent.

Add sherry and cook until reduced by half, about 1-2 minutes.

Stir in stock, bay leaf, and potato. Bring to a boil, then reduce heat and simmer for 15 minutes until potatoes are tender.

Remove from heat and purée the soup.

Return the puréed soup to the pot, adjust thickness with additional broth, and season. Garnish with crème fraîche before serving.
