Instructions

  1. Combine masa harina, water, and salt in a bowl, adding more water if needed to form a soft, pliable dough.

  2. Rest dough, covered, for 15 minutes.

  3. Process beans or chicharrón in a blender until smooth and paste-like, if using.

  4. Divide dough into 6 portions. Lightly oil hands, form each portion into a ball, create an indentation, then fill with desired ingredients and seal the dough.

  5. Flatten each filled ball into a 1/4 inch thick disk, ensuring filling remains enclosed.

  6. Lightly oil and heat a skillet over medium heat. Cook pupusas for 2-3 minutes per side until browned.

  7. Remove from heat and serve warm, optionally with pickled cabbage slaw and tomato sauce.
