Instructions

  1. Start boiling 1 cup of water in a large pot with 1/2 pound each of chopped spinach and mustard greens, 1 to 2 chopped green chile peppers, and 1 teaspoon salt; cook until very tender.

  2. Mash the cooked greens into a coarse paste.

  3. In a large skillet, melt 2 to 3 tablespoons ghee and fry 1 large grated onion until light golden.

  4. Reduce heat to medium, then add 1 tablespoon ginger, 1 tablespoon garlic, 1 teaspoon each of ground coriander, cumin, and garam masala, 1 tablespoon lime/lemon juice, and 1 tablespoon Bengal gram flour; cook for 3 minutes until thick and fragrant.

  5. Stir the mashed greens into the skillet until thoroughly blended and warmed.

  6. Season with salt, garnish with unsalted butter, and serve with flatbread.
