Instructions

  1. Preheat oven to 350 F and line baking sheets with parchment paper.

  2. Combine brown sugar and vegetable oil in a large bowl.

  3. Stir in pumpkin puree, eggs, and vanilla extract.

  4. In a separate bowl, whisk together flour, pumpkin pie spice, baking powder, baking soda, and salt.

  5. Gradually add dry ingredients to wet ingredients; mix until just combined.

  6. Scoop dough onto prepared baking sheets and bake for 10-12 minutes until set.

  7. Cool completely on a wire rack.

  8. For the filling, beat butter, cream cheese, and vanilla until smooth.

  9. Gradually add powdered sugar and beat until smooth.

  10. Spread filling on half of the cooled cookies, then top with remaining cookies. Refrigerate for 30 minutes before serving.

  11. Store in an airtight container in the refrigerator for up to 3 days.
