Pumpkin Spice Snickerdoodles

Instructions

Preheat oven to 375 F.

Cream butter, sugar, and brown sugar until blended.

Stir in pumpkin purée, then egg yolk and vanilla extract.

In a separate bowl, whisk together flour, pumpkin spice, baking soda, cream of tartar, and salt.

Gradually incorporate dry ingredients into the wet mixture until fully combined.

Cover the cookie dough and chill for 45 minutes.

While dough chills, line a cookie sheet with parchment paper.

Combine 1/4 cup sugar and 2 teaspoons pumpkin pie spice for coating.

Shape chilled dough into 16 (1 1/2 tablespoon) balls.

Roll each ball in the sugar-spice mixture, then space on the prepared sheet.

Bake for 12 to 14 minutes until set.

Let cookies cool completely on the sheet.
