Instructions

  1. Preheat oven to 425 F and lightly grease a 9-inch pie plate.

  2. In a bowl, combine oats, flour, brown sugar, pecans, and cinnamon.

  3. Mix oil and water, then blend into the dry ingredients to form the crust; press into the prepared pie plate.

  4. Bake the crust for 8 to 10 minutes until edges brown, then remove.

  5. Whisk together 1/3 cup brown sugar, granulated sugar, eggs, vanilla, salt, and spices.

  6. Stir in half-and-half until smooth, then mix in pumpkin.

  7. Pour the pumpkin filling into the baked crust.

  8. Bake for 10 minutes at 425 F, then reduce oven temperature to 350 F and continue baking for 30 to 40 minutes, or until the filling is set.
