Pumpkin Oat Muffins With Dates Recipe

Instructions

  1. Preheat the oven to 375 F (190 C) and prepare 10-12 muffin cups.

  2. In a bowl, combine 1 cup flour, 1/2 cup brown sugar, baking powder, 1 tsp cinnamon, salt, ginger, nutmeg, and baking soda.

  3. In another bowl, whisk egg, pumpkin, vegetable oil, milk, and vanilla.

  4. Stir the wet mixture into the dry ingredients, then fold in dates and 1 cup rolled oats.

  5. Fill muffin cups two-thirds full with batter.

  6. For the streusel, combine 1 1/2 tbsp butter, 1/2 tsp cinnamon, 1/3 cup brown sugar, 1 tbsp flour, and 1 tbsp oats until crumbly.

  7. Sprinkle streusel over the muffins.

  8. Bake for 17-20 minutes, or until a toothpick inserted comes out clean.

  9. Cool muffins in the pan for 5 minutes, then move to a rack to cool.

  10. Serve as desired.
