Pumpkin Fudge

Instructions

  1. Line a 9x13-inch baking pan with nonstick foil.

  2. In a large, heavy saucepan, combine granulated sugar, brown sugar, evaporated milk, pumpkin puree, butter, pumpkin pie spice, and salt.

  3. Bring the mixture to a rolling boil over medium heat, stirring constantly. Continue to boil and stir for 10-12 minutes until a candy thermometer reads 235 F (soft-ball stage).

  4. Promptly stir in white chocolate chips, marshmallow crème, chopped walnuts, and vanilla extract for one minute until the chocolate is melted.

  5. Immediately pour the fudge into the prepared pan.

  6. Cool completely on a wire rack for at least 2 hours, then cover tightly.

  7. Remove fudge from the pan using the foil, detach the foil, and cut into 1-inch pieces.
