Instructions

  1. Preheat the oven to 350 F and prepare muffin tins with cooking spray or paper liners.

  2. Whisk flour, pumpkin pie spice, baking soda, baking powder, and salt in a large bowl.

  3. Cream sugar and butter in a stand mixer until light and fluffy.

  4. Beat in eggs one at a time, then mix in pumpkin purée and vanilla extract.

  5. Alternately add the dry ingredients and milk to the wet mixture, beginning and ending with the dry ingredients, blending until just incorporated.

  6. Stir in 1 cup of chocolate chips.

  7. Fill muffin cups 2/3 full, then sprinkle the tops with the remaining 1/2 cup of chocolate chips.

  8. Bake for about 20 minutes, or until a toothpick inserted in the center comes out clean.

  9. Cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
