Instructions

  1. Preheat oven to 350 F (180 C) and grease two 9-inch round cake pans.

  2. In a large bowl, combine sugar, oil, and eggs until smooth.

  3. Separately, stir together dry ingredients in a medium bowl.

  4. Add dry ingredients to the egg mixture, beat until blended, then mix in pumpkin puree.

  5. Pour batter into prepared pans and bake for 35 to 40 minutes.

  6. Cool cakes in pans for 10 minutes on racks, then invert onto racks to cool completely.

  7. For the frosting, sift confectioners' sugar into a bowl.

  8. Beat butter and cream cheese until creamy, then add sifted sugar and vanilla, beating until smooth.

  9. Frost the cooled pumpkin cake and sprinkle with chopped pecans.
