Instructions

  1. In a medium saucepan, combine pumpkin, apple cider, maple syrup, pumpkin pie spice, salt, and a cinnamon stick; bring to a boil over high heat.

  2. Reduce heat to medium and cook for 20 to 25 minutes, stirring frequently, until the mixture thickens.

  3. Remove from heat, discard the cinnamon stick, and stir in vanilla.

  4. Cool for approximately one hour, then transfer to an airtight container for storage.
