Instructions

Preheat the oven to 350 F.

Lightly grease a 9-x 5-inch loaf pan and line it with a parchment paper sling.

In a large bowl, whisk bananas, eggs, and brown sugar, mashing the bananas until mostly smooth.

Stir in oil, yogurt, pumpkin puree, and vanilla until well combined.

In a separate medium bowl, combine flour, pumpkin pie spice, baking soda, baking powder, and salt.

Add the dry ingredients to the wet mixture, whisking until just combined with no visible flour; fold a few more times to ensure thorough mixing.

Transfer the batter to the prepared loaf pan, smooth the top, and tap to release air; optionally top with nuts.

Bake for 50 to 60 minutes until a toothpick inserted into the center comes out with only a few moist crumbs.

Cool the bread completely in the pan, then use the parchment sling to remove it; serve plain or with a glaze or yogurt.
