Instructions

  1. Preheat the oven to 350 F.

  2. Lightly grease a 9-x 5-inch loaf pan and line it with a parchment paper sling.

  3. In a large bowl, whisk bananas, eggs, and brown sugar, mashing the bananas until mostly smooth.

  4. Stir in oil, yogurt, pumpkin puree, and vanilla until well combined.

  5. In a separate medium bowl, combine flour, pumpkin pie spice, baking soda, baking powder, and salt.

  6. Add the dry ingredients to the wet mixture, whisking until just combined with no visible flour; fold a few more times to ensure thorough mixing.

  7. Transfer the batter to the prepared loaf pan, smooth the top, and tap to release air; optionally top with nuts.

  8. Bake for 50 to 60 minutes until a toothpick inserted into the center comes out with only a few moist crumbs.

  9. Cool the bread completely in the pan, then use the parchment sling to remove it; serve plain or with a glaze or yogurt.
