Pulled Pork With Wet Mustard Rub

Instructions

  1. Preheat a smoker to approximately 225 F and soak wood chips.

  2. Combine rub ingredients into a paste.

  3. Coat the pork shoulder with the rub, then wrap and refrigerate for 1 hour or overnight.

  4. Place the unwrapped pork in the smoker and cook for about 8 hours, or until it reaches 185 F internal temperature, adding wood chips and charcoal as needed.

  5. Remove pork, wrap tightly in foil, and let rest for 1 hour.

  6. Shred the pork using two forks.

  7. Serve with barbecue sauce if desired.
