Instructions

  1. Layer half the onions in a slow cooker, place the seasoned pork roast over them, then add the remaining onions, peppers, and lime juice.

  2. Cover and cook on high for 6 hours.

  3. Remove the pork and vegetables, shred the pork, discard cooking liquid, and return the shredded pork to the slow cooker.

  4. Stir in barbecue sauce, then cover and cook on low for 1 hour.

  5. Serve on toasted buns with coleslaw and pickles.
