Pulled Chicken Tacos

Succulent pulled chicken tacos can be prepared on the stove, in an Instant Pot, or a slow cooker, perfect for piling onto tortillas with desired toppings.

Instructions

  1. Place chicken in a deep skillet with onion, garlic, broth, salt, and pepper.

  2. Simmer on medium heat, then reduce to low, partially covered. Cook chicken breasts for 10-15 minutes or thighs for 30 minutes until tender. Drain the liquid, reserving 1/4 cup of broth, and discard onion and garlic.

  3. Shred the cooked chicken. In the same pan, combine the reserved 1/4 cup broth with chili powder, cumin, and paprika. Simmer until heated, then add the shredded chicken and stir to coat. Remove from heat.

  4. Stir in lime juice, then season with additional salt and pepper to taste.

  5. Serve immediately on warm tortillas with desired toppings.
