Instructions

Season chicken with adobo.

Heat olive oil over medium heat in a skillet or Dutch oven.

Brown chicken for 5 minutes per side.

Stir in potatoes, tomato sauce, chicken broth, culantro, olives, cumin, Italian seasoning, bay leaf, achiote oil, and sofrito, ensuring chicken is coated.

Cover and reduce heat to low; simmer for 35 minutes until chicken reaches 160 F.

Remove the bay leaf and culantro leaf before serving.
