Instructions

  1. Preheat the oven to 350 F.

  2. In a skillet, heat olive oil and sauté onions and celery for 5 minutes until tender. Add garlic and cook 1 minute. Stir in diced tomatoes and parsley, cooking until most liquid is absorbed; set aside.

  3. Place fish fillets in a baking pan. Season them with salt, pepper, and oregano.

  4. Top the fish with the cooked vegetable mixture and lemon slices.

  5. Combine lemon juice and wine, then pour over the fillets and into the pan.

  6. Sprinkle breadcrumbs over the fillets and remaining crumbs into the pan liquid.

  7. Bake uncovered for 30 to 40 minutes, or until the fish flakes easily.
