Provençale Sauce

A fragrant Provençale tomato sauce combines sautéed onions and garlic with capers, olives, and herbes de Provence.

Instructions

  1. Sauté onions in a saucepan until translucent for about 5 minutes.

  2. Add tomato concassé, garlic, and herbes de Provence; continue sautéing until tomatoes soften (about 10 minutes).

  3. Stir in tomato sauce, capers, and olives, then simmer and reduce for approximately 10 minutes.

  4. Season with salt and pepper, then serve.
