Provençale Sauce
A fragrant Provençale tomato sauce combines sautéed onions and garlic with capers, olives, and herbes de Provence.

Instructions

Sauté onions in a saucepan until translucent for about 5 minutes.

Add tomato concassé, garlic, and herbes de Provence; continue sautéing until tomatoes soften (about 10 minutes).

Stir in tomato sauce, capers, and olives, then simmer and reduce for approximately 10 minutes.

Season with salt and pepper, then serve.
