Prosforo Orthodox Offering Bread
A sacred double loaf of Prosforo is prepared for the Greek Orthodox Divine Liturgy, symbolizing the dual nature of Jesus Christ.

Instructions

Preheat oven to 355 F (180 C).

Dissolve yeast in 1/2 cup lukewarm water.

Sift flours and salt into a large bowl. Add yeast mixture and remaining water, then mix by hand until dough comes together.

Knead dough on a floured surface for 20 minutes until smooth and elastic. Rest 10 minutes, then knead for another 5 minutes.

Lightly flour an 8-inch cake pan. Divide dough into two equal round loaves.

Place one flattened loaf in the pan and press a seal into it. Place the second flattened loaf on top, then dust the seal with flour and press firmly to imprint.

Poke 12 holes at the cross corners of the seal with a wooden skewer.

Cover with a towel and let rise for 20-25 minutes.

Bake for 1 hour and 15 minutes, loosely covering with foil if browning too much.

Remove from oven, transfer to a rack, cover with a towel until cooled, then brush off residual flour.
