Prosciutto-Wrapped Stuffed Meatloaf Recipe

Instructions

  1. Preheat the oven to 350 F and line a baking sheet with foil.

  2. In a large bowl, combine beaten eggs, beef, sausage, onion, garlic, breadcrumbs, Italian seasoning, and pepper; mix well.

  3. On parchment paper, pat the meat mixture into a 12- by 10-inch rectangle.

  4. Spread pesto, then layer peppers, basil, and mozzarella, leaving a 1-inch border.

  5. Using the parchment, tightly roll the loaf from the shorter side, then pinch and seal all seams.

  6. On the prepared baking sheet, arrange 4-5 overlapping prosciutto slices to match the loaf's length, then place the meatloaf seam-side down on top.

  7. Completely wrap the meatloaf with additional prosciutto slices, ensuring it is securely encased.

  8. Bake for 1 hour to 1 hour 10 minutes, until an internal temperature of 150 F is reached.

  9. Rest the meatloaf for 10 minutes before slicing.
