Proper British Apple Pie

Instructions

  1. Preheat oven to 425 F (220 C).

  2. Combine flour, butter, and salt in a bowl, then rub butter into the flour until crumbly.

  3. Stir in water with a cold knife until the dough binds, adding more water if dry.

  4. Wrap the dough and chill for 15 to 30 minutes.

  5. Simmer apples with lemon juice and water until soft; stir in sugar and cinnamon, then remove from heat, add butter, and cool.

  6. Roll out half the dough, line a 7-inch pie dish, and fill with the cooled apple mixture.

  7. Roll the remaining dough for the pie lid; moisten the dish edges, cover the pie, press edges to seal, and crimp.

  8. Brush the pie top with milk and bake for 20 to 25 minutes.

  9. Serve hot or cold with desired accompaniments.
