Prime Rib for Two

A simple roasted prime rib for two, served with potatoes and carrots, makes for a complete one-dish meal.

Instructions

  1. Preheat the oven to 400 F.

  2. Rub the frozen prime rib with garlic cloves, then drizzle and rub with olive oil, kosher salt, black pepper, and marjoram.

  3. Arrange potatoes in a baking pan, place the rib on top, and scatter carrots around.

  4. Roast the frozen prime rib for 1 hour 15 minutes for rare (130 F internal) or 1 hour 25 minutes for medium (140 F internal).

  5. Cover the rib with foil and let stand for 5 minutes.

  6. Slice into 1-inch pieces.

  7. Serve with potatoes, carrots, and optionally, sour cream and chives.
