Pressure Cooker Round Steak and Vegetables

Instructions

  1. Heat the pressure cooker. Cook bacon until almost crisp, then remove the bacon pieces.

  2. Brown the cubed steak in the hot drippings.

  3. Add beef stock and wine, seal the cooker, and cook on high pressure for 8 minutes.

  4. Add the reserved bacon, mushrooms, onions, potatoes, parsley, salt, pepper, and bay leaf.

  5. Reseal the cooker and cook for another 8 minutes, then allow the pressure to drop naturally.

  6. Discard the bay leaf. Transfer the meat and vegetables to a warm serving platter.

  7. To thicken the gravy, combine 1 tablespoon flour with 2 tablespoons water; stir this paste into the cooking liquids and simmer until thickened.

  8. Serve the round steak and vegetables with the thickened gravy.
