Pressure Cooker Pork Roast

Instructions

  1. Trim any fat from the pork and pat it dry. Combine caraway seed, salt, and pepper, then rub this mixture over the roast.

  2. Heat 1 tablespoon oil in a 4- to 6-quart pressure cooker over medium heat. Brown the roast on all sides, then remove and set aside. Drain any excess fat.

  3. Place a trivet in the pressure cooker. Return the browned meat to the cooker and add the onion, water or broth, and apple cider. Lock the lid, bring to high pressure, and cook for 45 minutes.

  4. Allow pressure to release naturally, then carefully remove the lid. Transfer the roast and onion to a serving platter and cover to keep warm. Add the apples to the pressure cooker, bring to a boil, then loosely cover and cook over medium heat for 5 minutes until crisp-tender. Remove apples with a slotted spoon and add to the platter with the pork and onions. Serve immediately.
