Pressure Cooker Beef and Guinness Stew
A hearty pressure cooker beef stew, featuring stout, carrots, garlic, and onions, is inspired by a traditional Irish recipe.

Instructions

Heat oil in the pressure cooker over medium-high heat. Sear stew meat in batches for 3-4 minutes per side until browned, then set aside.

If needed, add more oil, then sauté onion for 4-5 minutes until translucent. Add garlic and sauté for 30 seconds.

Return seared meat to the pot. Stir in stout, thyme, and bay leaf.

Lock the lid, bring to high pressure over high heat, and cook for 20 minutes. Remove from heat, quick-release pressure, and let stand for 5 minutes.

Add carrots and pearl onions. Relock lid, bring to high pressure, and cook for 5 minutes. Remove from heat and quick-release pressure.

Remove the bay leaf. Sprinkle flour into the stew, stirring to combine. Simmer over medium-low heat for 5 minutes until thickened. Season with salt and pepper.

Serve stew with buttered egg noodles, mashed potatoes, or crusty bread.
