Preserved Whole Kumquats

Instructions

  1. Start boiling water for the canning bath.

  2. Wash kumquats, slice a thin sliver from the stem end of each, and pierce each fruit twice with a toothpick.

  3. Place prepared kumquats in a pot, cover with water, bring to a boil for 2 minutes, then drain; repeat this boil and drain process two more times for a total of three 2-minute boils.

  4. Return the drained kumquats to the pot, add sugar, water, a cinnamon stick, cardamom pods, and clove; cook over medium heat, stirring until the sugar dissolves.

  5. Raise the heat to high, bring the mixture to a full boil, then reduce heat to a gentle simmer and cook for 30 minutes.

  6. Remove from heat, then spoon the kumquats into clean canning jars, leaving 1 inch of headspace.

  7. Spoon the syrup from the pot over the fruit, ensuring kumquats are covered and at least half an inch of headspace remains.

  8. Wipe jar rims clean, screw on the canning lids, and process in the boiling water bath for 10 minutes.
