Preserved Grape Leaves Recipe
A simple method for preserving grape leaves yields one pint and can be easily scaled up for larger quantities.

Start by bringing a pot of heavily salted water to a boil for the grape leaves and a separate large pot of water to a boil for the canning bath.

Prepare an ice water bath. Blanch grape leaves in the salted boiling water for 30 seconds until wilted, then immediately transfer them to the ice water to cool completely before draining. Refresh the ice water as needed.

Stack approximately six grape leaves, aligning stems and ends, then roll them tightly.

Pack the rolled leaf bundles into a jar, folding ends to fit if necessary, ensuring 1/2 inch headspace.

Boil 1 cup of water for 1 to 2 minutes. Add lemon juice to the jar, then cover the grape leaves completely with the boiling water.

Clean the jar rim, seal, and process in the boiling water bath for 15 minutes. Cool, then store in a cool, dark place for up to six months; refrigerate after opening.
