Instructions

  1. Bring water, salt, and brown sugar to a boil in a large pot, then cool the solution.

  2. Stir in vinegar, pickling spice, black pepper, allspice, garlic powder, and tarragon.

  3. Submerge cleaned poultry in the cooled brine and refrigerate for one hour per pound, turning as needed for even brining.

  4. Rinse the poultry thoroughly before cooking.
