In a large bowl, combine potatoes, onion, 1 1/2 cups cheese (reserve 1/2 cup for topping), salt, and pepper.

Fold in sour cream until just combined.

Spoon the mixture into a buttered casserole dish or ramekins, creating an irregular surface.

Top with the reserved cheese and bake for 25 to 30 minutes, until golden brown.
