Instructions

  1. Preheat oven to 350 F.

  2. In a large bowl, combine potatoes, onion, 1 1/2 cups cheese (reserve 1/2 cup for topping), salt, and pepper.

  3. Fold in sour cream until just combined.

  4. Spoon the mixture into a buttered casserole dish or ramekins, creating an irregular surface.

  5. Top with the reserved cheese and bake for 25 to 30 minutes, until golden brown.
