Potato Soup With Ham and Cheese

Instructions

  1. Melt butter in a large saucepan over medium-low heat.

  2. Sauté sliced leeks and country ham until leeks are tender.

  3. Stir in flour and cook for 2 minutes.

  4. Add chicken broth, stirring until the mixture is thickened and bubbly.

  5. Stir in potatoes, increase heat to medium-high, and bring to a simmer.

  6. Reduce heat to medium-low, cover, and simmer for 20 minutes until potatoes are tender.

  7. Add parsley, chives (if using), and pepper.

  8. Stir in half-and-half (or milk) and shredded cheese; cook until the cheese has melted.

  9. Season with salt to taste.
