Instructions

  1. Brown uncased sausage in a skillet, breaking it apart; set aside.

  2. In a large pot, cook onions and diced bacon over medium heat until onions are translucent and bacon is crisp.

  3. Stir in garlic and cook for an additional minute.

  4. Add chicken base, water, potatoes, and kale or escarole; simmer for 15 minutes.

  5. Return the browned sausage to the pot with cream, then simmer for 3 to 4 minutes before serving.
