Instructions

  1. Start boiling potatoes in a large saucepan, covered with cold water and 1 teaspoon of salt.

  2. Simmer covered for 12-15 minutes until potatoes are tender; drain and cool completely.

  3. In a large bowl, combine the cooled potatoes, eggs, green onions, celery, relish, mustard, and 1 cup of mayonnaise, stirring in more mayonnaise, celery seeds, salt, and pepper to taste.

  4. Cover and chill the salad thoroughly before serving.
