Instructions

  1. Start boiling water in a medium pot.

  2. Peel and cut the potato into 1-inch chunks, then add them to the pot, ensuring they are covered by at least 1 inch of water.

  3. Boil for approximately 12 minutes until the potatoes are fork-tender.

  4. Drain the potatoes and combine them in a blender with the drained almonds (if using), sweetener, vanilla (if using), salt, and 3 cups of cool water.

  5. Blend until very smooth, then strain the mixture through a cheesecloth-lined strainer or nut milk bag into a bowl.

  6. Adjust the milk's consistency with more water if needed, sweeten to taste, and chill before serving.
