Potato Milk Recipe
A creamy, non-dairy potato milk can be made at home, offering an eco-friendly alternative to traditional nut milks.

Instructions

Start boiling water in a medium pot.

Peel and cut the potato into 1-inch chunks, then add them to the pot, ensuring they are covered by at least 1 inch of water.

Boil for approximately 12 minutes until the potatoes are fork-tender.

Drain the potatoes and combine them in a blender with the drained almonds (if using), sweetener, vanilla (if using), salt, and 3 cups of cool water.

Blend until very smooth, then strain the mixture through a cheesecloth-lined strainer or nut milk bag into a bowl.

Adjust the milk's consistency with more water if needed, sweeten to taste, and chill before serving.
