Potato Gratin With Cheese and Bacon

Instructions

  1. Preheat oven to 300 F (150 C) and grease a 10x12-inch shallow baking dish with butter.

  2. Peel, slice potatoes 1/8-inch thick, rinse, dry, and season generously with salt and pepper.

  3. Cut cheese into small cubes.

  4. Dry fry bacon lardons in a hot pan for 5 minutes until crisp, then drain on paper.

  5. Layer half the potatoes in the dish, then sprinkle with bacon, half the cheese, and the remaining potatoes.

  6. Pour in enough cream to cover potatoes, then dot the surface with remaining butter.

  7. Bake for 1 hour 15 minutes until potatoes are tender.

  8. Remove from oven, dot with remaining cheese, and bake for another 15 minutes until bubbling and golden. Let stand, covered, for 15 minutes before serving.
