Instructions

  1. Preheat oven to 350 F and grease a 2-quart baking dish.

  2. Boil potato chunks in water for 12-15 minutes until tender, then drain.

  3. Melt 1 tablespoon butter, then cook sausage, onion, and bell pepper until onion softens; set aside.

  4. In the same pan, melt 4 tablespoons butter, stir in flour until bubbly, then add milk and cook until thickened. Mix in 1 cup cheese, spice blend, salt, and pepper until cheese melts and sauce is smooth.

  5. Combine the sauce with potatoes and sausage mixture, then transfer to the baking dish and top with remaining 1/2 cup cheese.

  6. Bake for 20-25 minutes until hot and bubbly.
