Potato Bun Recipe

Instructions

  1. Start boiling unsalted water in a medium saucepan with peeled, cut potatoes; cook until fork-tender (8-10 minutes).

  2. Reserve 2/3 cup of the cooking liquid, then drain and mash the potato into a large bowl.

  3. Incorporate butter and the reserved cooking liquid into the mashed potato, mixing until smooth, then cool to lukewarm.

  4. In a stand mixer, combine flour, sugar, salt, yeast, egg, and the lukewarm potato mixture, stirring until just combined.

  5. Knead with a dough hook for 8 minutes until the soft, sticky dough forms.

  6. Transfer the dough to a greased bowl, cover, and let rise in a warm place until doubled in volume (about 1 hour).

  7. Punch down the risen dough and move it to a lightly floured surface.

  8. Form 9 uniform dough balls and place them 2-3 inches apart on a parchment-lined baking sheet.

  9. Gently flatten each shaped bun.

  10. Preheat the oven to 375°F (190°C) and let the covered buns rise for 30 minutes.

  11. Prepare an egg wash by whisking an egg with water, then brush it over the buns and sprinkle with sesame seeds.

  12. Bake for 12-15 minutes until golden brown; cool for 5 minutes, then transfer to a wire rack to cool completely.
