Potato and Green Bean Salad

Instructions

  1. Start boiling water for both potatoes and green beans. Scrub and cut potatoes into 1-inch pieces, then place them in a saucepan, cover with water, and add 1 teaspoon of salt; boil for 12-15 minutes until fork-tender, then drain and cool completely.

  2. Steam rinsed and trimmed fresh green beans for 5-7 minutes until tender-crisp (or follow package directions for frozen beans), then cool.

  3. In a large bowl, combine the cooled potatoes, green beans, chopped onion, and sliced celery; toss gently.

  4. Whisk together 3/4 cup mayonnaise, relish, lemon juice, sour cream, and fresh dill in a separate bowl; season with salt and pepper to taste.

  5. Combine the potato mixture with the dressing. Adjust seasonings and add more mayonnaise if desired.
