Potato and Basmati Rice Pilaf

Instructions

  1. Heat oil in a large skillet; add onion and sauté for a few minutes.

  2. Add diced potato and cook, stirring, until golden (6-8 minutes).

  3. Stir in cumin, turmeric, saffron threads, salt, and basmati rice; cook for 1-2 minutes until fragrant.

  4. Add broth and water.

  5. Bring to a boil, then reduce heat to low, cover, and simmer for 12-14 minutes until rice is tender.

  6. Stir in currants, almonds, chopped apricots, and butter. Taste and adjust seasoning before serving.
