Portuguese Codfish Balls

Instructions

  1. Start boiling water in a pot for steaming the cod.

  2. Steam cod until cooked and flaky, then flake the meat into a large bowl and chill.

  3. Once cold, add potatoes, parsley, minced onions, and eggs to the flaked cod and mix thoroughly; refrigerate if not forming balls immediately.

  4. Roll the chilled mixture into approximately 2-inch balls and lightly coat each with flour.

  5. Heat about 2 inches of oil in a heavy pot.

  6. Fry the floured balls in batches, turning until golden brown.

  7. Remove fried balls with a slotted spoon, drain on paper towels, and serve immediately.
