Portuguese Codfish Balls
Portuguese deep-fried codfish balls are a light appetizer or snack, prepared in advance for quick cooking.

Instructions

Start boiling water in a pot for steaming the cod.

Steam cod until cooked and flaky, then flake the meat into a large bowl and chill.

Once cold, add potatoes, parsley, minced onions, and eggs to the flaked cod and mix thoroughly; refrigerate if not forming balls immediately.

Roll the chilled mixture into approximately 2-inch balls and lightly coat each with flour.

Heat about 2 inches of oil in a heavy pot.

Fry the floured balls in batches, turning until golden brown.

Remove fried balls with a slotted spoon, drain on paper towels, and serve immediately.
