Instructions

  1. Shred pork into thin slices.

  2. Marinate the pork shreds for 20 minutes with rice wine or sherry, dark soy sauce, salt, and cornstarch.

  3. While pork marinates, shred cabbage or lettuce and arrange it on a plate.

  4. Heat a wok over medium-high to high heat with 2 tablespoons of oil. Stir-fry the marinated pork until nearly cooked, then remove it from the wok.

  5. Add 1 tablespoon oil to the wok. Cook ginger and sweet bean sauce until aromatic.

  6. Return the pork to the wok and mix with the sauce, seasoning as desired.

  7. Serve the pork over the shredded vegetables, garnished as preferred.
