Pork Tenderloin With Mushrooms and Onions

Slice pork tenderloin into 3/4- to 1-inch thick medallions, then pound each to 1/2-inch thickness.

In a large skillet, melt 1 tablespoon butter and 1 tablespoon olive oil over medium-low heat.

Sauté onions until softened, then add sugar and cook for 15 minutes, stirring frequently.

Stir in mushrooms and cook for 5 minutes until tender and golden brown; remove mixture and set aside.

Season pork with salt and pepper, then dredge in flour.

Add remaining 1 tablespoon butter and 1 tablespoon oil to the skillet.

Sear pork medallions over medium heat for 3-4 minutes per side until nicely browned.

Return the onion and mushroom mixture to the skillet with the pork, then add wine and broth.

Simmer uncovered for 2 minutes, then cover, reduce heat to low, and cook for an additional 10 minutes.
