Pork, Rice, and Celery Casserole

An easy-to-bake pork and rice casserole combines lean pork, rice, celery, onion, cream of chicken soup, and soy sauce for a savory meal.

Instructions

  1. Preheat oven to 350 F and grease a shallow 2-quart casserole dish.

  2. Cut raw pork into small cubes; dice leftover pork if using.

  3. Heat vegetable oil in a large skillet over medium heat, then brown the raw cubed pork.

  4. Add chopped onion and celery; continue cooking until the onion is golden. If using leftover diced pork, add it at this point and cook for 4 to 6 minutes until lightly browned.

  5. Stir in the cooked rice, cream of chicken soup, and soy sauce.

  6. Spoon the mixture into the prepared casserole dish.

  7. Cover tightly with foil and bake for 30 to 40 minutes, or until hot and bubbling.
