Pork Rib Roast
A seared and roasted pork rib roast is prepared with fingerling or small potatoes, seasoned with Cajun spices or salt, for a savory meal.

Instructions

Preheat the oven to 350 F and position a rack in the center.

Wash and pat dry the pork roast.

Combine Cajun seasoning, dry mustard, thyme, 1/2 tsp salt, half the minced garlic, and 1 tbsp oil, then rub this mixture over the roast.

Sear the roast in 2 tbsp oil in a large skillet over medium heat for about 3 minutes per side until golden brown, then remove.

In the same skillet, melt butter and cook potatoes, remaining garlic, onion, and carrots for about 5 minutes until browned and softened.

Arrange the cooked vegetables in a roasting pan, season with salt and pepper, then place the seared roast bone-side down on top.

Pour wine or chicken broth over the vegetables.

Roast uncovered for approximately 1 hour and 20 minutes, or until potatoes are tender and the roast reaches 145 F.

Allow the roast to rest for 10 to 15 minutes before slicing it into individual chops and serving with the roasted vegetables.
