Pork Lo Mein With Ramen Noodles

A simple Chinese-style pork lo mein, quickly prepared with ramen noodles and stir-fry vegetables.

Instructions

  1. Start boiling water for ramen noodles.

  2. Cut pork into thin strips; combine with soy sauce and cornstarch, then marinate for 15 minutes.

  3. Break ramen noodles into pieces, place in a bowl, pour boiling water over, cover, and let sit for 15 minutes, then drain thoroughly.

  4. In a small bowl, mix teriyaki sauce, chicken broth, and 1 teaspoon ramen seasoning packet.

  5. Heat wok to medium-high with 2 tablespoons oil. Stir-fry minced garlic for 15 seconds until aromatic.

  6. Add pork; stir-fry until nearly cooked and no longer pink. Remove pork to a plate.

  7. Heat remaining 2 tablespoons oil in the wok. Add stir-fry vegetables and cook according to package directions.

  8. Push vegetables to the side. Add broth mixture to the center of the wok, then add cornstarch slurry, stirring quickly to thicken.

  9. Return pork and noodles to the wok. Stir in green onion. Season with additional soy sauce and sugar if desired. Heat through and serve.
