Pork Japanese Cabbage Rolls

A delightful, non-traditional Japanese-style dish, these pork-filled cabbage rolls are simmered in a clear chicken broth.

Instructions

  1. Start boiling a large pot of water. Wash cabbage leaves, remove tough stems, and boil or steam them for 3-4 minutes until softened. Drain and set aside.

  2. Reconstitute dried shiitake if using, then squeeze and slice; otherwise, mince fresh shiitake, carrot, and onion. Combine ground pork, all minced vegetables, salt, and pepper in a bowl, then knead thoroughly.

  3. Divide the pork mixture into 8 equal portions. Place one portion on each softened cabbage leaf, then roll each leaf tightly, folding in the sides. Secure each roll with one or two toothpicks or reconstituted daikon strips.

  4. Arrange the assembled cabbage rolls in a large pan. Pour chicken stock and soy sauce over them, adding frozen vegetables if desired. Simmer on low heat for about 30 minutes until the pork is cooked. Serve 2 rolls per person with broth.
