Pork Chops With Tomatoes and Garlic

Instructions

  1. Heat oil in a large skillet over medium-high heat, then brown pork chops on both sides; drain excess fat and set chops aside.

  2. Slice the onion and add it to the pan; cook over medium-low heat for 2 to 3 minutes until softened.

  3. Return pork chops to the pan, then add garlic, tomatoes, broth, thyme, salt, and pepper.

  4. Reduce heat to low, cover the pan, and simmer for 30 minutes, or until the chops reach 145 F.
