Pork Chop and Sauerkraut Bake

Instructions

  1. Preheat the oven to 350 F and lightly grease a 2 1/2- to 3-quart baking dish.

  2. Season pork chops with salt and pepper.

  3. In a large skillet with olive oil, brown pork chops for 8 to 10 minutes, then set aside.

  4. Slice an onion and cook it in the same skillet until softened and lightly browned, about 8 minutes.

  5. Combine sauerkraut, caraway seeds, applesauce, and apple juice in a bowl.

  6. Spread the sauerkraut mixture into the prepared baking dish, top with pork chops, then add the browned onion.

  7. Cover the dish tightly with foil and bake for 45 minutes.

  8. Uncover and bake for another 10 minutes, or until the pork chops are tender.

  9. Garnish with fresh parsley or dill, if desired.
