Pork Burritos, Stovetop or Slow Cooker
These easy pork burritos feature tender pork simmered in a flavorful chile sauce, prepared on the stovetop or in a slow cooker, then wrapped in warm tortillas with desired toppings.

To cook the pork: For stovetop, place pork in a 2- to 3-quart saucepan with water. Bring to a boil, then reduce heat, cover, and simmer for 1 hour until very tender. Skim excess fat but keep the liquid. For slow cooker, place pork chunks with 1/2 cup water in the cooker, cover, and cook on high for 3 hours.

If using a slow cooker, drain the pork, retaining 3 to 4 tablespoons of the cooking liquid.

Remove stems and seeds from dried chiles, then process them until finely ground. Add the ground chiles (or about 2 tablespoons chili powder), garlic, salt, oregano, and vinegar to the pork.

For stovetop, simmer the pork mixture uncovered, stirring occasionally, until the sauce thickens, approximately 35 to 45 minutes. For slow cooker, cover and cook on high for 2 hours, or on low for 3 to 5 hours.

Preheat the oven to 350 F (180 C/Gas 4) if heating tortillas that way. Wrap tortillas in foil and heat in the oven for about 15 minutes, or microwave wrapped in plastic for 30 seconds until warm.

Spoon the pork filling down the center of each warm tortilla, add desired garnishes, then fold the ends over the pork and roll up to encase the filling.
