Pork, Apricot, and Pistachio Sausage
A unique turkey side dish, this pork sausage incorporates apples, apricots, and pistachios, offering a simpler alternative to a terrine.

Preheat oven to 400 F.

Combine ground pork with salt and pepper in a bowl.

Grate the apple into the pork mixture and combine.

Stir in chopped apricots, pistachios, lemon zest, and parsley until well combined.

Spread olive oil on a 17-inch aluminum foil piece. Arrange sage leaves end-to-end on the foil and season them.

Halve the pork mixture. Form one half into a cylinder on the sage leaves, then flatten it to create a central indentation.

Place one Merguez or Spanish chorizo in the indentation, cutting a second if needed to fit. Cover with the remaining pork mixture.

Roll the pork tightly in the foil, ensuring the sage leaves adhere, and adjust as necessary.

Re-wrap tightly, shape into a log, and twist foil ends to compact it; this can be refrigerated for up to two days before baking.

Bake for 40 minutes.
