Pork, Apricot, and Pistachio Sausage

Instructions

  1. Preheat oven to 400 F.

  2. Combine ground pork with salt and pepper in a bowl.

  3. Grate the apple into the pork mixture and combine.

  4. Stir in chopped apricots, pistachios, lemon zest, and parsley until well combined.

  5. Spread olive oil on a 17-inch aluminum foil piece. Arrange sage leaves end-to-end on the foil and season them.

  6. Halve the pork mixture. Form one half into a cylinder on the sage leaves, then flatten it to create a central indentation.

  7. Place one Merguez or Spanish chorizo in the indentation, cutting a second if needed to fit. Cover with the remaining pork mixture.

  8. Roll the pork tightly in the foil, ensuring the sage leaves adhere, and adjust as necessary.

  9. Re-wrap tightly, shape into a log, and twist foil ends to compact it; this can be refrigerated for up to two days before baking.

  10. Bake for 40 minutes.

  11. Slice and serve.
