Pork and Mashed Potato Casserole

Instructions

  1. Preheat the oven to 350 F.

  2. Sauté onion in butter over medium-low heat for 2 minutes until tender.

  3. Stir in flour for 2 minutes, then add salt, poultry seasoning, and pepper.

  4. Gradually add broth and water, stirring until the sauce thickens and bubbles.

  5. Stir in diced pork and vegetables, heating the mixture through.

  6. Transfer the pork mixture to a greased 1 1/2-quart casserole dish.

  7. Spread mashed potatoes evenly over the pork mixture.

  8. Bake for 25 to 35 minutes, optionally adding cheese for the final 5 minutes.
